Buttermilk Muffins

A simple and very tasty muffin.

- 1/4 cup molasses
- 1 tsp baking soda
- 1/2 cup brown sugar
- 1/4 cup margarine or butter
- 2 eggs
- 1 cup buttermilk
- 1/3 cup rice bran
- 1 1/3 cups rice flour
Combine the molasses with the soda until it has a foamy appearance. Set aside.
In another bowl, cream the sugar and butter then add in the eggs and buttermilk until mixed thoroughly. Then add the molasses mixture and mix well.
Finally add the rice bran and flour and blend until combined. Then pour into paper lined/greased muffin tins and bake at 375°F for 30 minutes, or until internal temperature of muffin reaches 205°F, using an instant read thermometer.
