Chipotle Grilled Salmon with Grilled Pineapple Salsa

Salmon is a great fish that you can experiment with flavors. This smoky chipotle glaze is delicious when topped with a sweet pineapple salsa

- 4 wild salmon fillets
- 1-2 chipotle peppers in GF adobo sauce
- 1 Tbsp cider vinegar
- 1 ½ Tbsp honey
- 3 cloves garlic minced
- ¼ tsp salt
- ¾ tsp oregano
- ¼ tsp cumin
- 1/8 tsp cinnamon
Pineapple Salsa
- 1 cored pineapple cut into 8 wedges
- 1 Tbsp brown sugar
- ½ tsp chilli powder
- ½ tsp cinnamon
- ¾ cup red pepper finely chopped
- ½ cup red onion finely chopped
- ¼ cup fresh cilantro chopped
- 2 Tbsp lime juice
In a blender combine peppers, vinegar, honey, garlic and remaining herbs and spices. Process until smooth.
Spread mixture on top of each fillet and grill until fish flakes easily with fork.
For salsa, toss pineapple wedges with brown sugar, chilli and cinnamon and grill until golden, about 5 minutes (turning once).
Coarsely chop pineapple and add remaining ingredients, tossing until combined.
Serve salsa over salmon.
