Chipotle Grilled Salmon with Grilled Pineapple Salsa

Salmon is a great fish that you can experiment with flavors. This smoky chipotle glaze is delicious when topped with a sweet pineapple salsa

Ingredients
  

  • 4 wild salmon fillets
  • 1-2 chipotle peppers in GF adobo sauce
  • 1 Tbsp cider vinegar
  • 1 ½ Tbsp honey
  • 3 cloves garlic minced
  • ¼ tsp salt
  • ¾ tsp oregano
  • ¼ tsp cumin
  • 1/8 tsp cinnamon

Pineapple Salsa

  • 1 cored pineapple cut into 8 wedges
  • 1 Tbsp brown sugar
  • ½ tsp chilli powder
  • ½ tsp cinnamon
  • ¾ cup red pepper finely chopped
  • ½ cup red onion finely chopped
  • ¼ cup fresh cilantro chopped
  • 2 Tbsp lime juice

Instructions
 

  • In a blender combine peppers, vinegar, honey, garlic and remaining herbs and spices. Process until smooth.
  • Spread mixture on top of each fillet and grill until fish flakes easily with fork.
  • For salsa, toss pineapple wedges with brown sugar, chilli and cinnamon and grill until golden, about 5 minutes (turning once).
  • Coarsely chop pineapple and add remaining ingredients, tossing until combined.
  • Serve salsa over salmon.
