Chipotle Grilled Wild Salmon with Grilled Pineapple Salsa
Salmon is a great fish that you can experiment with flavors. This smoky chipotle glaze is delicious when topped with a sweet pineapple salsa.

Chipotle Grilled Salmon with Grilled Pineapple Salsa
Ingredients
- 4 wild salmon fillets
- 1-2 chipotle peppers in GF adobo sauce
- 1 Tbsp cider vinegar
- 1 ½ Tbsp honey
- 3 cloves garlic minced
- ¼ tsp salt
- ¾ tsp oregano
- ¼ tsp cumin
- 1/8 tsp cinnamon
Pineapple Salsa
- 1 cored pineapple cut into 8 wedges
- 1 Tbsp brown sugar
- ½ tsp chilli powder
- ½ tsp cinnamon
- ¾ cup red pepper finely chopped
- ½ cup red onion finely chopped
- ¼ cup fresh cilantro chopped
- 2 Tbsp lime juice
Instructions
- In a blender combine peppers, vinegar, honey, garlic and remaining herbs and spices. Process until smooth.
- Spread mixture on top of each fillet and grill until fish flakes easily with fork.
- For salsa, toss pineapple wedges with brown sugar, chilli and cinnamon and grill until golden, about 5 minutes (turning once).
- Coarsely chop pineapple and add remaining ingredients, tossing until combined.
- Serve salsa over salmon.
