Chipotle Grilled Wild Salmon with Grilled Pineapple Salsa
Salmon is a great fish that you can experiment with flavors. This smoky chipotle glaze is delicious when topped with a sweet pineapple salsa.
For glaze, in a blender combine peppers, vinegar, honey, garlic and remaining herbs and spices. Process until smooth.
Spread mixture on top of each fillet and grill until fish flakes easily with fork. To prepare salsa, toss pineapple wedges with brown sugar, chilli and cinnamon and grill until golden, about 5 minutes (turning once).
Coarsely chop pineapple and add remaining salsa ingredients, tossing until combined. Serve over salmon.

Ingredients
- 4 wild salmon fillets
- 1-2 chipotle peppers in GF adobo sauce
- 1 Tbsp cider vinegar
- 1 ½ Tbsp honey
- 3 cloves garlic minced
- ¼ tsp salt
- ¾ tsp oregano
- ¼ tsp cumin
- 1/8 tsp cinnamon
Pineapple Salsa
- 1 cored pineapple cut into 8 wedges
- 1 Tbsp brown sugar
- ½ tsp chilli powder
- ½ tsp cinnamon
- ¾ cup red pepper finely chopped
- ½ cup red onion finely chopped
- ¼ cup fresh cilantro chopped
- 2 Tbsp lime juice
Instructions
