Lemon Wafers

These wafers make for a light and crispy snack.

- 1/4 cup butter or margarine
- 1/4 cup sugar
- 1 egg beaten
- Zest from 1 lemon
- 3/4 cup rice flour
Whip the sugar and butter together then blend in the egg and zest. Stir in the flour until well blended into a firm dough.
Sprinkle some rice flour on a sheet or waxed paper, then roll out the dough. Use your favorite shape to cut the dough into wafers then place on a cookie sheet and cook for 7-10 minutes.
