red wine vinegar

GF Dijon mustard

shallots
minced

dried thyme

clove
garlic

olive oil
Salt and pepper
to taste
Instructions
In a blender or food processor, combine all ingredients except the oil, process until smooth.
While the machine is running, slowly pour in the oil in a thin stream.
Notes
Sauté shallots first until sweet and caramelized, then add into mixture for a richer and smoother taste.
Makes about 1 cup
