Cream of Broccoli Soup

This soup is loaded with flavor! If you have any extra veggies in your fridge like zucchini, throw that in too for some added food value.

Ingredients
  

  • 1 Tbsp oil
  • 1 celery stalk chopped
  • 2 large onions chopped
  • 2 cloves garlic minced
  • 8 cups GF chicken or vegetable broth
  • 3 potatoes chopped
  • 2 carrots chopped
  • 1 bunch broccoli chopped
  • 1/2 cup zucchini chopped
  • 1/2 tsp marjoram
  • 1/2 tsp thyme
  • 1/2 tsp basil
  • Salt and pepper to taste

Instructions
 

  • In a stock pot add the oil, celery, onions and garlic and sauté until they become soft. Add in all the other ingredients and bring to a boil.
  • Lower the heat and simmer for about an hour, or until you see the potatoes breaking up and adding creaminess to the soup.
  • Serve the soup this way or if you prefer smooth and creamy, transfer to a blender and blend until creamy.
