Applesauce Pancakes

Less sugar is needed when using applesauce.

- 1 1/2 cup rice flour
- 3 Tbsp cornstarch
- 2 Tbsp potato starch
- 1 1/2 tsp baking powder
- 1 cup milk or milk alternative
- 1/2 tsp salt
- 2 eggs
- 3 Tbsp butter or margarine melted
- 1 cup applesauce
- 1 tsp lemon juice
Mix together flours, starches, baking powder and salt.
In a separate bowl, mix the remaining ingredients. Combine both bowls and mix well to remove any lumps.
Pour onto hot griddle.
