If using leftover prepared mashed potatoes, allow to come to room temperature (makes combining easier). If making fresh potatoes, add some milk and butter and whip until soft, but not runny.
Using your hands or a potato masher, combine together the mashed potatoes, 1/4 cup of the flour, and the seasonings. Taste and adjust seasonings as necessary. Take some mixture and shape into a ball, then flatten into a 3 inch patty (or make them whatever size you like), then lightly pat some flour onto each side.
Melt some butter into a skillet and fry patties on each side until golden, about 3-4 minutes per side. Serve hot.
