Chicken Paprikash Bisque

Ingredients
  

  • 2 Tbsp butter or margarine
  • 1 Tbsp paprika
  • 1/2 onion finely chopped
  • 1 red pepper finely chopped
  • 1 Tbsp cornstarch
  • 1 can 14oz crushed tomatoes
  • 2 cups GF chicken broth
  • 3 cups cooked rotisserie chicken chopped
  • 3/4 cup GF sour cream
  • Salt and pepper to taste
  • 3 Tbsp fresh Italian parsley chopped

Instructions
 

  • In a dutch oven or large pot, melt butter over medium-high heat and stir in paprika. Add onion and red peppers, sautéing until soft.
  • Stir in cornstarch, continue stirring for 2 minutes, and then add tomatoes. Bring to a simmer then add broth.
  • Cover and let simmer for 15-20 minutes. Remove from heat and add chicken and slowly stir in sour cream.
  • Season with salt and pepper, garnish with parsley and serve.
