Chicken Paprikash Bisque

Paprika gives a smoky flavor to this thick and rich tasting soup.

- 2 Tbsp butter or margarine
- 1 Tbsp paprika
- 1/2 onion finely chopped
- 1 red pepper finely chopped
- 1 Tbsp cornstarch
- 1 can 14oz crushed tomatoes
- 2 cups GF chicken broth
- 3 cups cooked rotisserie chicken chopped
- 3/4 cup GF sour cream
- Salt and pepper to taste
- 3 Tbsp fresh Italian parsley chopped
In a dutch oven or large pot, melt butter over medium-high heat and stir in paprika. Add onion and red peppers, sautéing until soft.
Stir in cornstarch, continue stirring for 2 minutes, and then add tomatoes. Bring to a simmer then add broth.
Cover and let simmer for 15-20 minutes. Remove from heat and add chicken and slowly stir in sour cream.
Season with salt and pepper, garnish with parsley and serve.
