Citrus Rice

Orange juice gives this a light citrus taste.

Ingredients
  

  • 2 stalks celery finely chopped (leaves included)
  • 1 small onion finely chopped
  • 1 1/4 cups orange juice
  • 1 cup rice
  • 3/4 cups water
  • 3 Tbsp oil
  • 1 tsp salt
  • 1/2 tsp thyme

Instructions
 

  • In hot oil, sauté the onion and celery until they become soft. Add the orange juice and water and bring to a boil.
  • Add the remaining ingredients, cover and simmer for about 20 minutes or until all the liquid is evaporated.
