Pineapple Pancakes

A delightful change from regular pancakes.

- 1/2 cup rice flour
- 1/2 cup potato starch
- 1/2 cup bean flour
- 2 Tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 cup crushed pineapple well drained (reserve juice)
- 1/4-1/2 cup milk or milk alternative
Thoroughly mix rice flour, potato starch, bean flour, baking powder, baking soda, salt and sugar together.
Measure pineapple juice from drained pineapple. Add enough milk to measure 3/4 cup liquid in total.
Beat egg and combine with crushed pineapple and juice/milk liquid into a separate bowl. Blend this thoroughly with the flour mixture until smooth.
Pour onto a hot greased griddle.
