Pineapple Pancakes

Ingredients
  

  • 1/2 cup rice flour
  • 1/2 cup potato starch
  • 1/2 cup bean flour
  • 2 Tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 1 cup crushed pineapple well drained (reserve juice)
  • 1/4-1/2 cup milk or milk alternative

Instructions
 

  • Thoroughly mix rice flour, potato starch, bean flour, baking powder, baking soda, salt and sugar together.
  • Measure pineapple juice from drained pineapple. Add enough milk to measure 3/4 cup liquid in total.
  • Beat egg and combine with crushed pineapple and juice/milk liquid into a separate bowl. Blend this thoroughly with the flour mixture until smooth.
  • Pour onto a hot greased griddle.
