Chicken Stir Fry

Loaded with veggies and tender chicken strips.

- 5 mushrooms sliced
- 3 chicken breasts cut into thin slices
- 1 zucchini thinly sliced
- 1 red pepper cut into strips
- 1 onion chopped
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 3/4 cup GF chicken broth
- 2 Tbsp oil
- 1 1/2 tsp cornstarch
- 1 tsp salt
- 1/4 tsp pepper
Heat oil in wok or large frying pan. Stir fry chicken slices for about 3 minutes. Add vegetables and continue to stir fry for an additional 6 minutes.
Dissolve cornstarch in broth. Add salt, pepper and broth to chicken and vegetable mixture. Keep this cooking about 3-4 minutes, or until it's fairly thick.
Serve over rice or GF angel hair pasta.
