Spiced Sponge Cake

Cinnamon and ginger give this sponge cake a wonderful flavor.

- 4 eggs separated
- 2 Tbsp cornstarch
- 3/4 cup sugar
- 1/4 cup arrowroot
- 1 tsp allspice
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1/2 tsp baking soda
- 1/2 tsp cream of tartar
- 1 Tbsp golden corn syrup
Beat the eggs whites until stiff.
Combine remaining ingredients, blend until smooth. Fold in egg whites.
Pour into tube pan and bake at 350°F for about 25 minutes. Press lightly with your finger, if the cake springs back, it's cooked.
