Sugar-Crusted Lemon Crisps

Great for dipping in hot cup of tea - or a tall glass of cold milk.

- 4 eggs
- 1/2 cup sugar
- 1/4 tsp salt
- 2/3 cup oil
- 1 1/4 cups potato starch
- 2 1/2 tsp lemon zest divided
Topping:
- Cinnamon sugar 4 Tbsp sugar + 1 tsp cinnamon
Using a mixer, beat the sugar and eggs for 2-3 minutes. Add salt, oil, starch and 1 1/2 tsp zest, blend well until a smooth cookie dough forms.
In a small dish, add cinnamon sugar and 1 tsp zest. Form dough into the shape of small balls, roll in sugar mixture, then place on a lightly greased cookie sheet and bake at 350°F for 10-15 minutes.
