Won Ton Soup

Ingredients
  

WON TONS

  • 2 lbs ground pork
  • 5 suey choi finely chopped
  • 5 Tbsp GF soy sauce
  • 1 Tbsp sesame oil
  • 3 cloves minced garlic
  • 2 Tbsp fresh ginger grated
  • 1 pinch salt
  • 1 egg
  • 1 Tbsp cornstarch
  • 20 GF Won Ton wrappers

SOUP BROTH

  • 3 cups GF chicken stock
  • 3 celery stalks sliced
  • 24 mushrooms sliced
  • 3 carrots sliced
  • 1/4 cup onion chopped
  • 4 cabbage leaves chopped
  • 1 green onion chopped
  • 1 Tbsp GF soy sauce
  • 1 tsp sesame oil
  • 2 suey choi cut in 2-inch pieces

Instructions
 

  • To prepare Won Ton filling: Put pork and chopped suey choi in a large glass bowl. Add 5 Tbsp soy sauce, 1 Tbsp sesame oil, garlic, ginger, and salt. Stir until seasonings and cabbage are evenly mixed. Add egg and mix. Add cornstarch and mix. Meat mixture should be holding together like for meatballs. Add more cornstarch if needed.
  • To assemble Won Tons: Position wonton wrapper with one point towards you. Spoon 1 rounded teaspoon of filling just below center of skin. Fold bottom point of skin over the filling. Roll up skin and filling, leaving 1 inch at the top of skin. Moisten the right-hand corner with water. Grasp the two lower corners of triangle; bring these towards you below the filling. Overlap the left over the right corner, press and seal. Should make approximately 20 wontons.
  • Bring about 3 cups of chicken stock to boil. Boil won tons in 3 separate batches. Takes about 8 minutes per batch to cook. I always pull the biggest one in the batch out and cut it open to check it is well cooked. Don't let it boil too vigorously or they'll fall apart. Remove , drain, and set aside.
  • For Soup Base: Add remaining ingredients and bring to a simmer, add in won tons just before serving. Garnish with 1 chopped green onion if desired.
