Lemon & Parmesan Asparagus

Ingredients
  

  • 1 bunch of asparagus
  • 2 Tbsp olive oil
  • 2 Tbsp Parmesan cheese grated
  • 1 tsp lemon zest
  • Salt and freshly ground black pepper

Instructions
 

  • Trim ends of asparagus, and place in a medium sized saucepan of boiling water. Reduce heat slightly to a simmer,and parboil the asparagus for exactly 2 minutes and then drain the hot water.
  • While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon rind. Salt and pepper to taste.
