Meatloaf in a Cup

Serving this meatloaf in individual serving portions is a nice change from the regular loaf style.

Ingredients
  

  • 1 GF beef bouillon cube
  • 1 cup boiling water
  • 1 cup GF cornflake crumbs
  • 1 lb ground beef
  • 1 tsp salt
  • 1/4 tsp pepper
  • 2 Tbsp parsley
  • 2 Tbsp onion flakes
  • 1/4 tsp garlic powder
  • 1 egg
  • 1 tsp GF Worcestershire sauce
  • 2 Tbsp brown sugar
  • 1/4 cup GF ketchup

Instructions
 

  • Pour water into a large mixing bowl and add bouillon cube. Let sit for a few minutes, until the cube is fully dissolved.
  • To the bowl add the cornflake crumbs, spices, ground beef, Worcestershire sauce, and egg. Let sit for another minute or two and then stir with a fork or work with your hands.
  • Spray a large size muffin tin (six wells), and scoop the meatloaf mixture into the tins, making sure each portion is equal. Bake at 350°F for 20 minutes.
  • While that is baking, combine the brown sugar and ketchup in a small bowl. Remove meatloaf after 20 minutes from the oven and brush with the brown sugar and ketchup mixture. Bake for an additional 20 minutes until cooked through.
