Coconut Nests

A fun Easter treat you can make with your kids.

Total Time 45 mins
- 2 egg whites
- 2 cups sweetened shredded coconut
- 1/3 cup sugar
- 2 Tbsp cornstarch
- 1/2 tsp vanilla
- 1/8 tsp salt
Beat eggs until soft peaks form. Stir in remaining ingredients and mix until well blended.
Using your hands, get about 3 Tbsp of the mixture and shape into a ball, then drop onto a parchment lined baking sheet. Use a spoon to make a well in the center.
Bake at 325°F for 20-25 minutes or until slightly golden brown. Cool 10 minutes then remove onto cooling rack.
