Asian Lettuce Wraps

Asian flavored meat and veggie filling inside a crunchy lettuce leaf.

Ingredients
  

Sauce

  • 3/4 cup GF hoisin sauce
  • 1 1/2 tsp rice vinegar
  • 1 Tbsp honey
  • 3 tsp GF sweet chili sauce
  • 1 Tbsp lime juice
  • 2 tsp sesame oil
  • 1 clove garlic minced
  • 1 tsp ginger grated

Filling

  • 2 Tbsp oil
  • 1 1/2 lbs ground pork or turkey
  • 1 clove garlic minced
  • 2 Tbsp GF soy sauce
  • 1 tsp brown sugar
  • 1 red pepper finely chopped
  • 1/2 onion finely chopped
  • 1 cup water chestnuts finely chopped
  • 1 cup mushrooms finely chopped
  • 2 tsp sesame oil

Toppings

  • Handful cilantro stems
  • 3 green onions sliced
  • 1 head iceberg butter, or Boston lettuce, separated into whole leaves
  • 1/2 cup peanuts or cashews chopped

Instructions
 

  • To make the sauce; in a saucepan over medium heat, combine all the ingredients. Stir and heat until well blended, then turn down to low and let simmer until meat mixture is ready.
  • To make filling; cook ground meat until fully cooked (drain off any fat if necessary). Add remaining ingredients, and cook until heated throughout (or until veggies are cooked to your likeness). Stir in 1/2-3/4 of the sauce (reserve some for serving), and place into a serving bowl.
  • To serve; set out individual bowls of reserved sauce, filling mixture, and toppings.
  • To eat; take a lettuce leaf, fill with a few tablespoons of filling, add any toppings and extra sauce you'd like, then gently fold lettuce leaf around burrito-style.
  • *If you can't find a GF hoisin sauce, a GF teriyaki sauce can be substituted.

Notes

If you can't find any GF hoisin sauce, you can substitute in GF teriyaki sauce.
