Mango, Tomato & Avocado Salad

Mango gives this salad a bit of sweetness that balances the sharp flavor of the vinaigrette and onions perfectly.

- 1 mango cut into cubes
- 1 to mato cut into cubes
- 1/3 cup red onion thinly sliced
- 1/2 avocado cut into cubes
- Boston Bib or Butter Lettuce leaves
Vinaigrette
- 2 Tbsp fresh cilantro chopped
- 2 Tbsp olive oil
- 1 Tbsp white wine vinegar
- 1 Tbsp lemon juice
- 1 clove garlic minced
- 1/4 tsp salt
- 1/8 tsp pepper
Whisk together the dressing ingredients together and set aside.
In large bowl add mango, tomato and onions, then pour dressing over it. Cover and refrigerate for 1-4 hours.
Just before serving, stir in avocado and divide into four portions and serve on a bed of lettuce.
