Goat Cheese Herb Dip

Use as a dip for veggies and gluten free crackers, or use as a spread on your favorite sandwich.

Ingredients
  

  • 3/4 cup plain Greek yogurt
  • 4 oz GF goat cheese
  • 1 clove garlic minced
  • 1 Tbsp fresh basil chopped
  • 1 Tbsp fresh dill chopped
  • 1 Tbsp fresh chives chopped
  • 1/2 tsp lemon zest
  • 1/8 tsp paprika
  • 1/3 cup oil packed sun-dried tomatoes finely chopped, optional
  • Salt and pepper to taste

Instructions
 

  • Combine all ingredients and let sit for at least one hour to allow flavors to develop.

Notes

If using dry sun-dried tomatoes, soften them first in hot water. Drain well.
