Quinoa & Mushroom Sauté

Mushrooms and thyme add a wonderful flavor to the quinoa, turning this into a wonderful savory side dish you are sure to enjoy.

Ingredients
  

  • 1 cup quinoa
  • 1 Tbsp olive oil
  • 1 lb mushrooms thinly sliced
  • 2-3 cloves garlic minced
  • 1/2 tsp dried thyme
  • 1-2 tsp GF balsamic vinegar
  • Salt and pepper to taste
  • 2 Tbsp Parmesan grated (optional)

Instructions
 

  • Cook quinoa according to package directions, set aside.
  • In a large skillet heat oil and sauté mushrooms until golden. Add in garlic, thyme, and balsamic vinegar. Stirring until garlic is fragrant.
  • Add in cooked (and drained) quinoa, stirring until well combined. Season to taste with salt and pepper.
  • Garnish with cheese if desired.
