Cheese & Jalapeno-Stuffed Chicken

Ingredients
  

  • 4 chicken breasts or thighs)
  • 1 cup Cheddar cheese grated
  • 2 Tbsp pickled jalapeno peppers minced (or 1 Tbsp fresh)
  • 1/3 cup GF cream cheese
  • 2 Tbsp oil
  • 1 cup GF panko bread crumbs

Instructions
 

  • Butterfly cut the breasts and pound with a mallet to thin.
  • In a bowl cream together the cheeses and jalapenos until smooth. Divide mixture into 4, and place into center of each chicken breast.
  • Roll chicken up and secure with toothpicks so cheese doesn’t melt out.
  • Rub each with oil then dredge in a bowl filled with the bread crumbs. Place on a parchment lined baking sheet and bake at 450°F for 30-40 minutes or until fully cooked.

Notes

Serve with some guacamole if desired.
Instead of jalapenos, try sun-dried tomatoes, artichokes or black olives.
