Butterfly cut the breasts and pound with a mallet to thin.
In a bowl cream together the cheeses and jalapenos until smooth. Divide mixture into 4, and place into center of each chicken breast.
Roll chicken up and secure with toothpicks so cheese doesn’t melt out.
Rub each with oil then dredge in a bowl filled with the bread crumbs. Place on a parchment lined baking sheet and bake at 450°F for 30-40 minutes or until fully cooked.
Notes
Serve with some guacamole if desired. Instead of jalapenos, try sun-dried tomatoes, artichokes or black olives.
