North Pole Cupcakes

  • Make the cupcakes according to its recipe directions. Remove from tin and allow to cool completely, then frost with icing of your choice. For a sparkling snow effect, sprinkle some coarse sugar all over the icing.
  • For the top of the candy cane, you can use a red Smartie or a sugared cranberry. To get it to stick on the top, you could use a bit of frosting, royal icing, or melt it on. To melt it on use a lighter or your gas stove, and heat the end of the candy cane until it starts to bubble and melt (but not blackened), then quickly press the Smartie onto the end. Once it's secure, press it gently into the cupcake and secure the North Pole sign on.
