Tarragon Green Beans

Ingredients
  

  • ½ lb green beans

Dressing

  • 1 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 1 tsp GF Dijon
  • 1 garlic clove finely chopped*
  • 1 Tbsp fresh tarragon finely chopped
  • Salt to taste

Instructions
 

  • Steam beans until tender crisp.
  • Whisk all dressing ingredients together and toss with hot (or room temp) green beans.

Notes

When used raw, it's best to finely chop the garlic with a knife rather than use a garlic press. A garlic press crushes the entire clove and breaks all its cells open which releases the pungent oils. Using a knife damages less cells, therefor the garlic will not have such a harsh bite in the dressing.
