Chickpea & Quinoa Salad

- 15 oz chickpeas rinsed and drained
- ½ cup red quinoa cooked and cooled (or white quinoa)
- 2 green onions thinly sliced
- 1 cup cherry tomatoes
- 6 cups salad greens
Dressing
- Zest from 1 lemon
- 2 Tbsp lemon juice
- 3 Tbsp olive oil
- 1 Tbsp fresh Italian parsley
- ¼ tsp red pepper flakes
- Salt and pepper to taste
In a large bowl whisk dressing ingredients together, then add chickpeas and allow to marinate for at least 30 minutes.
Cook quinoa according to package directions. Spread out on a baking sheet and allow to cool.
Divide remaining ingredients up into 4-6 bowls, then drizzle with dressing (and chickpeas), tossing to coat.
