Chickpea & Quinoa Salad

Ingredients
  

  • 15 oz chickpeas rinsed and drained
  • ½ cup red quinoa cooked and cooled (or white quinoa)
  • 2 green onions thinly sliced
  • 1 cup cherry tomatoes
  • 6 cups salad greens

Dressing

  • Zest from 1 lemon
  • 2 Tbsp lemon juice
  • 3 Tbsp olive oil
  • 1 Tbsp fresh Italian parsley
  • ¼ tsp red pepper flakes
  • Salt and pepper to taste

Instructions
 

  • In a large bowl whisk dressing ingredients together, then add chickpeas and allow to marinate for at least 30 minutes.
  • Cook quinoa according to package directions. Spread out on a baking sheet and allow to cool.
  • Divide remaining ingredients up into 4-6 bowls, then drizzle with dressing (and chickpeas), tossing to coat.
