Lemon Caper Coleslaw

By just changing a few ingredients to plain coleslaw, you turn it into a whole new dish with delicious and unexpected flavors.

fresh broccoli-slaw mix or coleslaw mix
¼
cup
fresh Italian parsley
chopped

Tbsp
lemon zest

Tbsp
capers
drained
Dressing
1/3
cup
buttermilk or alternative*
1/3
cup
GF mayonnaise

Tbsp
lemon juice
Salt and pepper to taste
Instructions
Whisk together all dressing ingredients until smooth then toss with remaining salad ingredients.
Notes
*Add 1/2 tsp of white vinegar to a milk alternative and let sit for 5 minutes.
