Apple & Cinnamon Pancakes

Plain pancakes made with apple juice and cinnamon.

- 1 egg
- 1/4 cup apple juice
- 1 Tbsp butter or margarine melted
- 1/4 cup amaranth flour
- 1/4 cup tapioca flour
- 3 Tbsp arrowroot flour
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1/2 tsp baking powder
- 1/4 tsp salt
In a medium mixing bowl, beat the egg with the apple juice and melted butter. Add the remaining ingredients and stir.
Pour batter into a hot greased griddle.
