Plain pancakes made with apple juice and cinnamon.

Ingredients
  

  • 1 egg
  • 1/4 cup apple juice
  • 1 Tbsp butter or margarine melted
  • 1/4 cup amaranth flour
  • 1/4 cup tapioca flour
  • 3 Tbsp arrowroot flour
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions
 

  • In a medium mixing bowl, beat the egg with the apple juice and melted butter. Add the remaining ingredients and stir.
  • Pour batter into a hot greased griddle.
