Corn Dogs

Ingredients
  

  • 1 package GF Hot Dogs

Batter

  • 1 egg
  • 3/4 cup GF cornmeal
  • 3/4 cup rice milk
  • 1/3 cup rice flour
  • 1/3 cup potato starch
  • 1/3 cup tapioca flour
  • 2 Tbsp butter or margarine melted
  • 1 Tbsp cider vinegar
  • 2 tsp chili powder
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 4 cups cooking oil for deep frying

Instructions
 

  • Combine all ingredients except the hot dogs in a food processor.
  • Mix until it's smooth. Place a popsicle stick through each hot dog.
  • Holding onto stick, dip all sides of hotdog into the batter. Deep fry until golden brown in color.

Notes

Only cook three corn dogs at a time, because you want to keep the oil temperature quite hot.
