Pizza Muffins

Ingredients
  

  • 2 eggs beaten
  • 1 cup rice flour
  • 1/2 cup cornstarch
  • 1/2 cup bean flour
  • 1 Tbsp baking powder
  • 2 tsp sugar
  • 1 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/2 cup GF pizza sauce
  • 1/3 cup mozzarella cheese shredded
  • 1/4 cup mushrooms chopped
  • 1/4 cup green pepper chopped
  • 1/4 cup onions chopped

Instructions
 

  • Thoroughly mix eggs, rice flour, bean flour, cornstarch, xanthan gum, baking powder, baking soda, salt, sugar, garlic powder and oregano.
  • Blend the remaining ingredients in well.
  • Grease muffin tins and fill with batter 2/3 full. Bake at 350°F for 45 minutes or until lightly browned.
  • Note: A variety of your favorite vegetables or meat can be used.
