Brazilian Potato Biscuits

A great way to use left over potatoes.

Ingredients
  

  • 1 potato peeled, cooked & mashed
  • 1 egg yolk
  • 4 Tbsp rice flour
  • 2/3 cup cornstarch
  • 1/4 cup butter or margarine
  • 1 tsp baking powder
  • 1 tsp salt

Instructions
 

  • Mix all ingredients together until a dough forms (add more cornstarch if necessary).
  • Roll out dough and cut out into biscuits.
  • Place on lightly greased cookie sheet and bake at 350° for 20 minutes or until lightly brown.
