Baby Bok Choy with Cashews

Dark leafy greens that are loaded with vitamins. Cashews are crunchy and the baby bok choy is delicate and flavourful.

- 2 Tbsp olive oil
- 1 cup green onions chopped (including green ends)
- 3 cloves garlic chopped
- 1 lb baby bok choy chopped
- 1/2 tsp sesame oil
- 1/2 cup roasted cashews chopped
- Salt to taste
Heat olive oil in a large sauté pan on medium-high heat. Add onions, then garlic, then bok choy. Sprinkle with sesame oil and salt. Cover, and let the baby bok choy cook down for approximately 3 minutes.
Remove cover, lower heat, stir and cook until the bok choy is just cooked. Toss in the cashews.
