Ingredients
  

  • 1 - 16 oz. bag frozen corn
  • 1 red onion diced
  • 2 to matoes diced
  • 2 cucumbers peeled and diced
  • 1 cup green onion chopped
  • 1/2 cup cilantro leaves chopped
  • 1/2 cup apple cider vinegar
  • 2 Tbsp parsley chopped
  • 1 tsp garlic powder
  • 2 avocados diced
  • Salt and pepper to taste

Instructions
 

  • Combine all ingredients, except avocado, then chill 30 minutes.
  • Gently mix in avocado before serving.
