How to Make Corn Tortillas

Only 2 ingredients are needed to make your own homemade corn tortillas. Buying a good quality metal tortilla press will make these a snap to prepare, otherwise you can always use a rolling pin.

Ingredients
  

  • 2 cups masa harina corn tortilla flour
  • 1 1/4 - 1 1/2 cups warm water depending on the humidity

Instructions
 

  • Mix the flour with 1 1/4 cups of warm water. Knead until mixture forms a smooth dough (like Play-Doh), and doesn't crack when rolled into a ball (if it cracks, add 1 Tbsp more water at a time, until consistency is reached).
  • Roll dough into 12-16 balls, a bit bigger than a walnut. Cover balls with damp towel until ready to press.
  • Using a tortilla press, lay the ball between two pieces of plastic wrap (or wax paper), and place it slightly off center into the press, keeping it closer to the hinge side. Press, rotate dough slightly, then press again until a 6" circle is created.
  • The best method to cook tortillas is using a cast iron griddle, however a cast iron skillet or even an electric fry pan will work, as well. Heat a DRY pan to medium-high, and place tortilla in for 30 seconds. Flip and cook for 60 seconds on other side, then flip again and cook for another 30 seconds.
  • Wrap the hot tortillas in a foil package, then cover in kitchen towel to keep warm and soft while you cook the rest of the tortillas.

Notes

If you don't have a press, you can always use a rolling pin to flatten the tortillas.
