Lemon & Sesame Shrimp Soup

A light Asian style won ton soup, but without the won tons. A perfect soup packed with flavor and nutrients, yet without a ton of calories.

- 4 green onions 1/2" slices (white and green parts)
- 1 Tbsp oil
- 2 1/2 cups red orange, yellow peppers, chopped
- 1 Tbsp fresh ginger minced
- 3 cloves garlic minced
- 6 cups water
- 1 cup broccoli florets bite-size
- 2 Tbsp GF soy sauce
- 1/4 tsp red pepper flakes
- 12 oz large shrimp peeled & deveined
- 4 cups kale or spinach chopped
- 2 tsp lemon zest
- 2 Tbsp lemon juice
- 1 Tbsp sesame oil
- 1/2 tsp sesame seeds
Heat 1 Tbsp of oil in a large stock pot and sauté green onions (white part) and peppers for about 5 minutes. Add garlic and ginger, cooking for another minute.
Add water, broccoli, soy sauce and red pepper flakes and bring to a boil.
Turn heat down to a simmer and add remaining ingredients, including green onion tops. Season to taste with salt and pepper. Simmer for 5 minutes then serve.
