Asian Cucumbers

For a little something different, try infusing some sliced cucumbers with some traditional Asian flavors like soy sauce and sesame oil.

Ingredients
  

  • 1 English cucumber chopped
  • 1 tsp salt
  • 1 Tbsp rice vinegar
  • 2 tsp sugar omit for low carb
  • 2 tsp GF soy sauce
  • ½ tsp sesame oil
  • 2 sliced green onions
  • 1 garlic clove minced
  • Pinch red pepper flakes
  • 2 Tbsp cilantro

Instructions
 

  • Sprinkle chopped cucumber with salt, place in colander, and let sit for 10 minutes (to remove water from the cucumber).
  • Whisk together remaining ingredients, then toss with cucumbers (can rinse if desired).
  • Allow to marinate for at least 30 minutes before serving.
