Parmesan Cheese Substitute

Use this substitute in places where you would sprinkle Parmesan on top of foods.

- 1 Tbsp coconut oil
- 1 cup cashews
- 1 cup pecans
- ½ cup nutritional yeast
- ½ tsp salt
Heat oil in pan over medium heat then add nuts. Stir pan often until nuts are fragrant and golden brown, about 5-7 minutes.
Pour into bowl of food processor and allow to cool completely.
Once cool, add nutritional yeast and salt, pulse until fine crumbs form.
Store in fridge for 2-3 weeks.
