Spicy Hoisin & Peanut Chicken

The combination of flavors in this dish are unbelievable. A sweet Asian sauce envelops the chicken, then is topped with a crunchy nutty-herb topping with a bit of spice.

Ingredients
  

  • 4 chicken breasts sliced in half horizontally (or can use chicken cutlets if prefer)

Topping

  • 3 Tbsp shallots finely chopped
  • ½ cup fresh cilantro chopped
  • 3 Tbsp peanuts chopped
  • 1 Tbsp pickled red jalapeno pepper finely chopped
  • 2 tsp orange zest

Sauce

  • 6 Tbsp GF hoisin sauce
  • 4 Tbsp orange juice
  • Salt and pepper to taste

Instructions
 

  • Fry shallots in oil until crispy. Place into a small dish with remaining topping ingredients, tossing to combine. Set aside.
  • In a small skillet combine all sauce ingredients, and bring to a boil. Reduce until thickened. Set aside.
  • BBQ chicken, basting with a bit of the sauce, until fully cooked.
  • Place chicken on a serving dish and pour over remaining sauce, and sprinkle over topping mixture.
