Spicy Hoisin & Peanut Chicken

The combination of flavors in this dish are unbelievable. A sweet Asian sauce envelops the chicken, then is topped with a crunchy nutty-herb topping with a bit of spice.

- 4 chicken breasts sliced in half horizontally (or can use chicken cutlets if prefer)
Topping
- 3 Tbsp shallots finely chopped
- ½ cup fresh cilantro chopped
- 3 Tbsp peanuts chopped
- 1 Tbsp pickled red jalapeno pepper finely chopped
- 2 tsp orange zest
Sauce
- 6 Tbsp GF hoisin sauce
- 4 Tbsp orange juice
- Salt and pepper to taste
Fry shallots in oil until crispy. Place into a small dish with remaining topping ingredients, tossing to combine. Set aside.
In a small skillet combine all sauce ingredients, and bring to a boil. Reduce until thickened. Set aside.
BBQ chicken, basting with a bit of the sauce, until fully cooked.
Place chicken on a serving dish and pour over remaining sauce, and sprinkle over topping mixture.
