Cauliflower Mash

Ingredients
  

  • 1 head cauliflower cut into florets
  • 2 Tbsp heavy cream
  • 1 Tbsp butter

Flavorings

  • 1 Tbsp cream cheese
  • 3 Tbsp sour cream
  • 1-2 Tbsp creamed horseradish sauce to taste
  • ¼ cup Parmesan or cheddar cheese grated
  • 1 Tbsp butter
  • Salt and pepper to taste

Instructions
 

  • Place the cauliflower, cream and butter into a large microwavable-safe bowl.
  • Cook on high for 6 minutes uncovered. Remove, stir to coat, then cook for another 6 minutes until fork tender.
  • Using an immersion blender or food processor, puree cauliflower. Add flavorings (adjusting to taste), pulsing until smooth and well combined.
