Light yet full of flavor, this Asian coleslaw is a tasty change from the usual.

- ⅛ tsp cayenne
- 3 Tbsp lime or lemon juice
- 2 Tbsp GF fish sauce
- 3 Tbsp vegetable oil
- 1-2 garlic cloves, crushed
- 1 chicken breast, cooked and shredded
- 4 cups cabbage, shredded
- 1 carrot, grated
- Peanuts for garnish (raw and toasted in a dry cast iron frying pan if possible)
- Combine salad ingredients and dressing in separate bowls, then toss together.
