Vietnamese Coleslaw

Light yet full of flavor, this Asian coleslaw is a tasty change from the usual.

Crunchy with a full flavor.
Ingredients
Dressing:
  • ⅛ tsp cayenne
  • 3 Tbsp lime or lemon juice
  • 2 Tbsp GF fish sauce
  • 3 Tbsp vegetable oil
  • 1-2 garlic cloves, crushed
Salad:
  • 1 chicken breast, cooked and shredded
  • 4 cups cabbage, shredded
  • 1 carrot, grated
  • Peanuts for garnish (raw and toasted in a dry cast iron frying pan if possible)
Instructions
  1. Combine salad ingredients and dressing in separate bowls, then toss together.
