Unbaked Chocolate Drop Cookies

Ingredients
  

  • 2 cups sugar
  • 1/2 cup butter
  • 1/2 cup milk or milk substitute
  • 1 tsp vanilla
  • 1 cup cocoa
  • 3 cups GF rolled oats

Instructions
 

  • In a saucepan, melt butter, then add sugar, milk and vanilla. Bring to a boil stirring constantly. Once at full boil, allow to boil for 3 minutes without stirring.
  • Remove from heat and quickly stir in cocoa and oats. Very quickly drop by teaspoonfuls onto a parchment lined baking sheet. Mixture will setup quickly, so get all the cookies dropped as quick as you can.
  • Allow to cool and dry completely. Do not refrigerate, store in an air tight container

Notes

Variation: add 1/2 cup GF peanut butter

  2. Tried making these last nightbut but it didn’t work. Only used half the recipe but got 36 loose tspfuls. I hoped they would set by morning when cool but no such luck. They are a soft mess. I’m now trying to figure out how to make these into something else that can be picked up. Maybe I’ll roll them in twice crispy crumbs to hold it together. Any other ideas?

  3. I’m so sorry it didn’t work out. Did you say that you halved the recipe? Sometimes certain recipes don’t duplicate well when not made in their full portions. Another thing I can think of, did you allow the mixture to boil for the full 3 minutes – that is an important step as it changes the sugars state so it will allow the cookies to dry and harden. Rolling/mixing them in a crispy cereal is a great idea!
