Turkey Meatloaf with Cranberry Glaze

A mild sweet flavour.
  • ¼ cup brown sugar
  • ½ cup cranberry sauce, mashed
  • 2 lbs ground turkey
  • ¾ cup milk or milk alternative
  • ¾ cup GF bread crumbs
  • 3 eggs, lightly beaten
  • 1½ tsp salt
  • ⅛ tsp pepper
  • ¼ cup red onions, diced
  • ½ cup chicken broth (or just enough to moisten)
  1. For the glaze, spread the brown sugar over the bottom of a greased loaf pan and spread the cranberry sauce over the sugar.
  2. In a large bowl mix all the remaining ingredients until well incorporated.
  3. Form the meat mixture into the loaf pan, laying out over the cranberry glaze, and bake at 350F for 1 hour.
  4. Allow to cool 10 minutes, then flip over loaf onto a plate and serve.
