A great snack to make with your kids.
Toasted Pumpkin Seeds
- 1 medium sized pumpkin
- 1 Tbsp of salt
- 2 Tbsp oil
- Scoop out the seeds from your Halloween Jack-O-Lanterns, separating the seeds from the stringy core, then rinse.
- In a small saucepan, bring 3 cups of water to a boil then add the seeds and salt. Let simmer for 10 minutes.
- Drain seeds, and set aside. Grease a baking sheet with the oil, then scatter the seeds evenly to create one layer, and bake at 400°F on the top rack until the seeds begin to brown, about 10-20 minutes. When browned to your satisfaction, remove from the oven and let the pan cool on a rack before eating.
