Spanish Rice Pilaf

Pilaf is a rice dish that has been cooked in a seasoned broth. A variety of veggies and spices can be added to change the flavors to best accompany your main dish. In this one, tomato juice and Southwest spices add a ton of flavor and fragrance.

Spanish Rice Pilaf

Ingredients
  

  • 3 cups tomato juice
  • 2 stalks celery chopped
  • 2 cups white rice uncooked
  • 1 onion chopped
  • 1 green pepper chopped
  • 3 Tbsp oil
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp pepper

Instructions
 

  • Bring the rice, salt, pepper, cumin and coriander to a boil with the tomato juice. Reduce heat, then cover and simmer for about 20 or until rice is cooked. Set aside.
  • In a skillet, sauté the onion, celery and pepper in hot oil until they become soft. Then add the rice mixture and stir until well combined.
