Great white bun or bread recipe.
Ingredients
  • 1½ cups warm water
  • 2 Tbsp honey or sugar
  • 2½ tsp yeast (1 8g packet)
  • 3 eggs
  • 4 Tbsp oil
  • 1 tsp cider vinegar
  • 2 cup rice flour
  • ½ cup tapioca flour
  • ½ cup potato starch
  • 3 tsp xanthan gum
  • 1½ tsp salt
Instructions
  1. In mixing bowl, add water and honey. Mix well then sprinkle yeast over top. Let sit for 10 minutes so yeast will activate. Then add remaining wet ingredients and mix.
  2. In another bowl mix all dry ingredients together, then add into wet mixture. Mix until incorporated. The batter will be thick (like pancake batter).
  3. To make slider buns (for mini burgers), use an ice cream scoop to form dough. Place on greased baking sheet and let rise for 30 minutes. Then bake for 25-30 minutes at 350°F, or until internal temperature reaches between 200°F-208°F, using an instant read thermometer (using a thermometer is the only way to be sure you loaf is fully cooked).

    Can an egg substitute be used instead of the 3 eggs? My biggest problem with gluten-free recipes is that I'm allergic to eggs.

      Yes you can but just be aware that they may not rise as much and the batter may be looser. You may want to use a hamburger bun pan (like a muffin top pan) to help keep their shape in case they spread out too much.
