Scallops with Lemon & Caper Brown Butter Sauce

If you’re a seafood lover, and delight in the delicate flavor and texture of a perfectly cooked scallop. Then you also know that scallops on their own are quite bland. It’s what you marinate or cook them with, that really turns them into a seafood lovers feast.

Lemon and capers are two of the most flavor packed ingredients, and when paired with a brown butter sauce…oh so good!

If you’ve never had brown butter before, it has a concentrated deep and nutty flavor. It’s made by lightly simmering butter until its milk solids and salt particles have turned brown (stirring continuously), and all water has been evaporated out.

Scallops with Lemon & Caper Brown Butter Sauce

Lemon and capers create a light delicious sauce, perfect for delicate scallops.

Ingredients
  

  • 10 large scallops or 2 cups small Bay scallops
  • 5 Tbsp brown butter divided
  • 1 lemon peeled, 4 segments, rest juiced (Learn Technique)
  • 2 Tbsp capers drained
  • 2 Tbsp fresh parsley chopped

Instructions
 

  • Depending on size, sauté scallops for 3-5 minutes in 1 Tbsp brown butter, season with salt and pepper. Do not overcook, or they will become rubbery. Set aside.
  • Heat remaining butter over med-high heat and add remaining ingredients. Break up lemon segments and stir until liquid is slightly reduced.
  • Add scallops, stirring to coat, then serve.
