Pesto Hollandaise


Traditional hollandaise sauce can have up to a whole cup of butter in it. Tastes incredible I know, but after eating it I feel I have to work out twice as hard just to justify having that second helping.

But in under 5 minutes, this low calorie sauce can be whipped up, and won’t make you feel as guilty when you ask for seconds!

Thick and rich without all the fat and calories.
  • ⅓ cup buttermilk or alternative
  • ⅓ cup GF mayonnaise or vegan mayonnaise
  • 1 Tbsp lemon juice
  • 2 Tbsp basil pesto
  • 1 tsp butter or margarine
  • 1 tsp cornstarch + 1 tsp water (mix together in small dish)
  1. Combine first four ingredients together in a small saucepan, whisking well. Over medium heat, warm mixture than add butter.
  2. Bring to a light simmer, stirring often, and then slowly pour in cornstarch mixture. Stir until thickened.
To Make Buttermilk: put ¼ tsp vinegar into measuring cup and add whole milk (or milk alternative) to bring to ⅓ cup - let stand 5 minutes.
