Peach Crisp

A layer of fresh or canned peaches, topped with a crunchy oat-and-brown-sugar streusel, then throw it in the oven until bubbly and crisp. Apples may be traditional in this dessert, but peaches add a light and delicate flavor that tastes equally as delicious. Top with some gluten free vanilla ice cream, and you’re all set!

Use fresh or canned peaches, and top with this sweet crunchy crumble.

Ingredients
  

  • 6-7 peaches peeled & sliced (or canned)
  • ¾ cup GF rolled oats
  • ¾ cup brown sugar
  • ½ cup brown rice flour
  • ½ cup butter or margarine
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ cup coconut optional

Instructions
 

  • Place peach slices in a 9x12 baking dish (or smaller depending on how thick you want the fruit layer to be).
  • Mix remaining ingredients together using a mixer or hands, then sprinkle over peaches. Bake at 350°F for 35 minutes.

  1. To replace the oats, you could try 1/2 cup gluten free graham crumbs and increase the coconut to 1/2 cup. Let me know how it turns out!

  2. I make ice cream all the time and use a regular recipe but substitute canned heavy coconut milk for the whipping cream and carton coconut milk for the milk portion. Use the milk you like.
    1c. cream, 1/2 c. milk, 2 eggs, 1/2 tsp vanilla, 1/2 c. sugar. Blend, freeze, makes 1 pint. Add chocolate syrup, choc. chips, other flavorings, fruit. Be creative.

  4. There is really no wrong amount for these kinds of recipes. Make the peach layer as thick or as thin as you like, and the crumble layer as thick or thin as you like (double it if you like!).
