Orange Quinoa Salad

With orange, quinoa, arugula, goat cheese and fresh herbs,  this is the type of salad where you need to have a piece of everything in every bite. That is the only way you can truly appreciate the unique flavor combinations in this Orange Quinoa Salad.

Cook quinoa according to package directions then lay out on a baking sheet to cool. Whisk together all dressing ingredients.

Orange Quinoa Salad

Ingredients
  

  • 3 cups quinoa cooked and cooled
  • 3 cups arugula lightly packed
  • 1-2 cups canned mandarin oranges drained
  • ¼ cup mixed fresh chives and dill finely chopped (loosely packed)
  • Feta or goat cheese optional

Dressing

  • ¼ cup olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp white wine vinegar
  • Pinch salt and pepper

Instructions
 

  • Cook quinoa according to package directions then lay out on a baking sheet to cool.
  • Divide arugula and oranges into 4-6 bowls, then top with quinoa, oranges, and herbs.
  • Whisk together all dressing ingredients, then drizzle over salads. Garnish with cheese if desired.

  2. I’m confused… the line reads…With orange, quinoa, dill, arugula and goat cheese, but the recipe calls for chives not dill. In the picture it looks more like dill than chives..

  3. Everyone with our Premium Membership has access to all the nutritional information for every recipe, among other things. For this recipe there is 11.9g protein/serving in this salad. You can easily increase the protein in this recipe by adding some sliced chicken breast!

  4. Sorry about that – I’ve fixed the recipe! I like dill, but my husband hates it so I made his with all chives. When I’m typing up all my recipes there are a number of distractions around me (both are boys under the age of 8!), so I occasionally don’t proof read close enough 🙂
