Just like DQ Soft Serve Ice Cream!

In a small dish, add water and sprinkle gelatin over. Let sit 5 minutes.  In saucepan, warm milk over medium heat until almost a simmer. Remove from heat and stir in the sugar, vanilla, salt and gelatin mixture, stirring until sugar and mixture is smooth. Pour into a large container and chill until cold.

Stir in the cream, cover and refrigerate overnight. Pour mixture into an ice cream maker, and churn for about 20 minutes until thick.

Pour into container, and freeze for 6-8 hours. Press a bit of plastic wrap directly over the surface of the ice cream.

  • 1 envelope unflavored gelatin
  • ¼ cup cold water
  • 1 cup milk
  • 2/3 cup sugar
  • 1 tsp vanilla
  • ¼ tsp salt
  • 1 ½ cups heavy cream

Instructions
 

  • In a small dish, add water and sprinkle gelatin over. Let sit 5 minutes.
  • In saucepan, warm milk over medium heat until almost a simmer. Remove from heat and stir in the sugar, vanilla, salt and gelatin mixture, stirring until sugar and mixture is smooth. Pour into a container, and chill for 1 hour.
  • Stir in the cream, cover and refrigerate overnight.
  • Pour mixture into an ice cream maker, and churn for about 20 minutes. Pour into container,place plastic wrap directly over the surface of the ice cream and freeze for 6-8 hours.

  1. The texture will definitely be different – fat (and sugar!) is really needed in ice cream to give it that creamy, silky smooth mouth-feel – especially for this type of ‘soft-serve’ ice cream. But please let me know how it turns out if you use a dairy alternative!
